All you have to do is stream the file as is. You have to choose to watch the Master/HD file to watch that. For instance if you click the "Watch at the Geek Fighters Site" it will load up the flash player and begin streaming. All my most recent videos on youtube will give you the option to watch in 320p, 420p and 780p.
